Took care of my friend’s allotment a week. It was such a joy to see everybody’s flaunting flower boxes. I was extremely impressed by the size of the zucchinis. I’ve never in my entire life seen any this big, not even GMO in a store.

We ate by the road side more than once on our way home. Accompanying us in the van was one of our two car plants.

We fried red bell pepper, carrots and ginger, added canned green lentils and simmered with coconut milk, ground tomatoes, fresh cilantro, black pepper and vegetable broth. Served with whole-grain couscous.

Skatteunge byn was such a dream. We had the timing to be there straight after the warmest days of the summer, being able to stroll around the houses and enjoy the view in the evening without needing cardigans.

About 300 people lived in the village. According to one of the students at the self-supporting folk high-school, almost half of the villagers had once studied at the school and stayed after they’ve finished.

On our way to Östersund we stayed at a folk high-school in a village called Skattungebyn where they learn to live self-supporting.

They have a joint potato field and private land lots where they produce they’re own choice of greens. They also have green houses and hens and cocks.

On the night of our arrival we ate all home-grown; Oven-baked broccoli, cabbage, potatoes, radish and ginger with lettuce.

Many grocery stores in Sweden have started to have salad bars, at least during the lunch hours. This is what we bought when traveling by car to Östersund.

Vegan sökes

Har ju en del följare nu iaf, kanske till och med någon från Sverige som passar in på följande beskrivning:

Jag jobbar som frilans och försöker just nu sälja in en artikel om föräldrar till veganer. Jag letar därför efter någon som blivit vegan och haft en, till en början, något motsträvig förälder som varit orolig för tex näringsintag men som lärt sig mer och nu tycker det är relativt lätt att laga veganmat.

Jag är själv vegan och har jobbat med Djurens rätt och Djurrättsalliansen. Jag säger det eftersom jag är bekant med den okunskap veganer kan mötas av och också den vinkling artiklar om veganism kan få, som något konstigt. Mitt syfte är helt enkelt att visa på fördelar med vegansk kost. Jag ska även skriva en artikel med vetenskapliga motbevis till myterna kring vegansk kost.

Had some Tandoori spice mix that we fried with zucchini, carrots, cauliflower, baby spinach, onion, bell pepper and coconut milk.

Went to Chez Madame in Malmö and ate brunch. It’s a vegetarian restaurant with vegan options. I think it was about half the brunch menu that they could make vegan.

I took vegan scones with blackberry jam and “smörrebröd” which was a really ample sandwich with seeds, a paste of sun-dried tomatoes, topped with firm tofu (that I think was mixed with almonds to resemble cottage cheese), zucchini and baby spinach.

On the bottom you can see my friend’s fruit salad (not much for the money compared to the rest).
